1/4 Cup Butter
1/2 Cup Brown Sugar

4 - Pineapple Slices 8 oz can - Drain & Reserve Juice
4 - Maraschino Cherries cut in half

1 Cup Chopped NUTS
1 – 18 ½ oz Yellow Cake Mix
1 – 3 ¾ oz. Instant Vanilla pudding
1/2 Cup Coconut Flakes
4 – Eggs
1/2 Cup Reserved Juice or Cold Water
1/2 Cup Wesson oil
1/2 Cup Bacardi or Parrot Bay Rum

 
Preheat oven to 350.

Spray bundt cake pan with “PAM For Baking with FLOUR”. 

Cut butter and place in bundt pan.  Place in preheated oven for 3 - 5 minutes to melt butter.  Remove from oven and sprinkle Brown Sugar around the bottom of the pan onto the butter.  Place Pineapple Rings and Maraschino cherries around the pan.  Be careful not to burn yourself.

Mix all the remaining ingredients together with a mixer until well mixed. Pour batter into bundt pan.

Bake for 1 hour. Remove from oven and pour glaze (recipe below) over the cake in the bundt pan. Let cool for 15 minutes and then invert onto plate.  

Cook the following glaze:
2 Tablespoons Butter
1/4 Cup Water
1/2 Cup Sugar

Cook this in a small pan until sugar is dissolved and a soft boil starts - Cook for 5 minutes stirring often.  Remove from heat and pour in 1/4 Cup Rum.
