Rogers Balsamic-Roasted Onion Guacamole

IngredientsInstructions

Step One: 

1 large Vadilia onion or sweet onion, chopped
2 Tablespoons chopped Garlic, rounded
2 to 3 Tablespoons Balsamic Vinegar
1 Tablespoon Olive Oil
1 to 2 Jalapeno pepper, seeds removed chopped (Optional)
6 to 8 shakes of Hot Sauce (Optional)

Step Two: 

4 California Avocados, peeled, mashed and placed in bowl.
2 Tablespoons Cilantro (Optional)
1 Tablespoon Lemon Juice
½ teaspoon Salt
½ teaspoon dried Italian Seasoning

Step Three:

 4 to 5 Tomatoes, chopped

Preheat oven to 425. 

Step One:  In a bowl toss the ingredients above until well coated.  Place on a FOIL LINED cookie sheet and spread out, not to thin.  Place in preheated oven for 25 minutes. DO Not stir. Remove from oven and let cool.

 

 

Step Two: In a bowl Mix, by hand, the ingredients. Stir in the onion mix very well after it has cooled.

 

 

Step Three: Now gently mix in the tomatoes and let stand for One hour in frig.  Remove from frig and enjoy with your favorite chips.
