Roger's Honey Molasses Cookies

Step one:

4 Cups all-purpose flour
1/4 teaspoon salt
1/4 teaspoon Nutmeg
2 1/4 teaspoons baking soda
2 teaspoons ground ginger
1 1/4 teaspoon ground cloves
1 1/4 teaspoons cinnamon
3/4 cup chopped pecans (optional)

Whisk above together in a bowl mixing well.

Step Two:

2 sticks unsalted butter, softened
3 cups sugar
1/4 cup unsulfured molasses
1/4 & 3 Tablespoons of Honey
2 large eggs

In another bowl, using an electric mixer, beat butter and 3 cups of sugar until light and fluffy (this can take about 8 to 10 minutes) and beat in molasses. Beat in eggs, one at a time, beating well after each egg. Gradually beat in the flour mixture ( I use a 1/4 measuring cup to do this) and combine well.

 

Step Three:

1/2 cup sugar (for coating cookies before baking)

Put sugar in a small bowl. Form dough into walnut size balls and roll around in the sugar until coated. On a lightly greased baking sheet arrange balls about 3 inches apart and flatten slightly with your hand.

Step Four:

Preheat oven to 325 degrees. Bake for 18 minutes. This varies depending on your oven. Mine tends to run a little cooler than most.

Final Step:

Let cookies cool for about 10 minutes before removing to a cooling rack.
